Debs Spicy Pork Recipe

This hot and spicy dish is a delight.
When I have a supper party for more than 10 guests I make this in one of my large size casseroles and serve it with rice and peas (recipe also available on here).
UNTENSILS:
Sharp Knife
Garlic Press
Saute/Fry pan (heavy based) OR
Heavy Based Casserole
Serves: 4-6
INGREDIENTS:
4-6 loin or shoulder pork fillets
1 onion - chopped
4 garlic cloves crushed
2-3 teaspoons ground chilli
2-3 teaspoons ground paprika
3-4 tomatoes quartered
Bisto
Wash and cut your pork into large chunks (I cut a chop into 2 pieces) keep the bone on and some fat for flavour.
Put in a bowl and add the seasonings, rubbing them into the meat.
Add salt & pepper
Put in the onions and tomatoes - cover and chill preferrably overnight or for at least 3 hours.
Get a good heavy based Casserole and add enough of what oil you like to use and to fry the meat both sides to brown. Turn the heat down and add the tomatoes and onions and mix enough bisto for 1 pint of water and add to the pan. Stir until boiled and if too thick water down or too thin add. Make sure all the meat is covered. When it's simmered for a few minutes taste it..add more seasonings if you prefer. (Although it's tempting you really don't need any other seasonings than the above - but hey make it your recipe!)
Now either keep it simmering in the pan on the hob (like I do) or cook in the oven.
Should take about 1 1/2 hours for the meat to be really tender.
Serve with Rice and Peas, Roasted Potatoes and steamed vegetables.
