Do you want succulent non-chewy roast beef? Then try this method compliments of John.
For a 1kg piece of Beef (any type even brisket)
Rub mustard, horseradish and your favourite seasonings into the beef (John particularly likes Steak Seasoning).
Wrap your beef in good quality thick foil (or double up a thinner one) and close it up like an envelope.
Roast in a pre-heated oven at 150 to 160C/Gas 3 for minimum of 3 hours.
No basting required!
Take it out and let it rest for another 20 minutes.
Use the stock for the perfect gravy.
